Ingredients For This Recipe
- 1 lb ground beef, 80/20
- 8 corn tortillas
- 8 american or cheddar cheese, slices
- ½ ice berge lettuce head, fine julienne
- Thousand island dressing, to taste
- 1 tbsp oil, or more if needed
- Burger spice mix
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 2 tbsp salt
- 2 tbsp pepper
- Pico de gallo
- 2 roma tomatoes, seeded and small dice
- ½ white onion, small dice
- 1 whole dill pickle, small dice
- 1 jalapeno, small dice
- ¼ cup cilantro, chopped
- ½ lime, juiced
- Salt, to taste
Preparation
- Mix well all the ingredients for the pico de gallo.
- Place in a 1-quart bowl mix all the hamburger spices.
- Divide ground beef into 2-ounce balls.
- Preheat skillet for 2 minutes over medium-high heat and add oil.
- Place 2 balls in skillet and season with spice mixture.
- Place a tortilla on top of each and with the spatula flatten the meat until flat and cook on both sides.
- Season the meat again and place a slice of cheese on top; cook until the tortilla is golden brown.
- Repeat with the rest, clean and add a little more oil to the pan if necessary.
- Top your tacos with lettuce, pico de gallo and thousand island.
- Serve, garnish and enjoy.
